Q: How did you develop the neon aurora style of sushi presentation?

A: It was a natural evolution from my background in both traditional Japanese cuisine and Scandinavian design. I wanted to create something that honored the clean lines of Nordic aesthetics while celebrating the vibrant energy of neon art. The frosty glass effects came from experimenting with temperature and light during one particularly cold winter in Oslo.

Q: What's your favorite creation in this style?

A: Definitely our Electric Maki roll. It features geometric cuts that catch the light in specific ways, and we use natural ingredients to create the electric green glow against a deep blue backdrop. It's become our signature dish and represents everything we're trying to achieve with the fusion of culinary art and visual design.
